S as simple, S as salad!

Spring time, sun and warmer weather are here (well, they should be anytime now ), and cooking meals everyday is becoming a bit tiring, so making simple yet tasty and colorful salads is a great solution if u r feeling a bit lazy these days and just want to spend more time out in the sun instead of being a kitchen prisoner.

Here is a suggestion for a quick salad u can fix in less than 5 min. U can use these ingredients, or combine what u already have at home:

  • avocado
  • soy sauce or tamari
  • expanded rice crackers aka. puffed rice cakes
  • celery sticks
  • carrot

Take a salad bowl, break puffed rice cakes into smaller chunks, cut carrot, avocado and celery sticks as u prefer, spice it up with bit of soy sauce (for fully gluten free version skip this part and add a sprinkle of salt, some other spices if u prefer). I use rice cakes but any other type is also ok (corn etc.).

If  a have some cashews,  cherry tomatoes, red pepper, maybe a bit of garlic.. why not toss it inside as well! 🙂

In addition to this, in small jar in which there used to be one of those vegan spreads u buy in those fancy organic shops, I served blended, spiced chick peas (basically some variation of hummus). It adds up character to the whole salad, and goes great with expanded rice cake, especially if u r using non salted version like me.
